Smoked Pineapple Hot Sauce is sunshine with attitude, bright, fruity, lightly smoky, and built for everyday pouring. I take fresh pineapple and smoke it just enough to bring out its natural sweetness, then blend it with sweet peppers, fruity hot chilies, pineapple juice, and a splash of both apple cider and white vinegar for balance.
For the heat, I use peppers chosen specifically for their flavor:
a sharp, quick pop from Sugar Rush Peach peppers up front, followed by a slow, warm burn from supporting chilis that fill your whole mouth without overpowering the pineapple.
Finished with smoked salt, lemon juice, and a touch of sugar, this sauce is refreshing, light, and ridiculously versatile.
